Today’s Lunch – 03/27/13

I’m down one pound from last week and I feel like I cheated a lot.  Don’t forget to drink that glass of water first thing when you wake up.

Today’s lunch was delicious.

Trader Joes’s Organic Herbed Salad Mix – Lots of Vitamin C which is needed to needed for normal vision, to support the immune system and for healthy skin

Organic Kale – Antioxidant, anti-Inflammatory, has omega-3 fatty acids, vitamin K, vitamin A,  high in fiber which, helps with detoxification

Cucumbers – High water content; vitamin A, B, and C; and minerals, like magnesium, potassium, manganese, and silica.  Great for the digestive system as it expels toxins.

Tomatoes – Excellent sources of potassium and several vitamins: folic acid
Vitamin A, Vitamin C, Vitamin E, helps to burn fat.

Scallions -Anti-oxidants, anti-inflammatory and ani-histamine.  Has plant fiber, minerals, and vitamins.  Vitamin B to helps with energy.  Helps in lowering blood sugar, high cholesterol and blood pressure.

Lemon, Garlic, Olive Oil homemade dressing with a pinch of Raspberry Vinaigrette
with a little bit of feta cheese.
